Healthy Cheesy Spinach and Bacon Gnocchi



This recipe always reminds me of a more grown-up and sophisticated version of Mac and Cheese.  It is super comforting on a cold winter's night while still managing to be lower in points. My husband and I frequently have this dinner with a small glass of wine when we want to have a 'date night' at home. 

I love to make a double batch of this and freeze half of it.  If you freeze it before baking it is really easy to just defrost and bake for 20 minutes for a super quick mid-week meal. Making double batches of meals on the weekend is one of my best tips.  It has saved me from a quick take-out or fast-food many, many times.   It's wonderful to know that you don't have to worry about dinner when you have an emergency come up, work late, or can't be bothered.  The later is by far the most common issue I have!


Feel free to leave out the turkey bacon to make it a vegetarian dish.  You can also use any gnocchi that you would like.  Our local grocery store makes a fantastic homemade gnocchi.  You can also find them in the pasta isle or frozen.

Ingredients:
· 

· 1 lb prepared gnocchi
· 2 tablespoons butter spread
· 2 tablespoons flour

· 1 cup skim milk
· 4 ounces 50% fat cheddar, shredded
· 1 tablespoon whole grain mustard
· 2 cups spinach
· 4 slices turkey bacon, cooked and chopped

Directions:

1. Preheat the oven to 350 degrees.  Cook the gnocchi based on packet instructions.  In a medium saucepan melt the butter spread and flour together on medium-high heat to make a roux. One the butter is melted it should make a soft dough.  Add the milk slowly to the roux being sure to constantly whisk the mixture until smooth. Season with salt and pepper to taste.

2. Add in half the  50% fat cheddar and mustard to the milk mixture. Stir in the spinach and gnocchi.  Scatter over the turkey bacon and the rest of the cheese.



3. Bake for 20 minutes at 350 degrees.
