Week 3 - Weigh-In!

I have to apologize that I haven't been writing as much as I would like.  It has been a slightly chaotic week in our household.  My youngest son got a very severe lung infection over the weekend and I got a small hairline fracture in my wrist.  Not the best start to the week!  It has made it difficult for me to type recipes or even cook. 

I did manage to make it to my regular meeting on Monday to weigh-in.  I was pretty excited to weigh-in despite all of the difficulties that had occured this week.  Normally I would eat a lot of unhealthy food that would make me feel less stressed and slightly better for a moment.  This time was different.  I focused and pointed up everything that I ate.  I was very pleased to find out that I was down 2.8 lbs!  It was a huge loss for me.  

I'm going to continue with the postive attitude and keep on focusing on tracking everything.  I'm not going to let a minor setback cause me to fail.  It's a journey that will take a while but I will learn from my mistakes and keep on pushing through.  

This week I will be posting a few new delicious recipes.  I'll try not to make it so long between posts.  My goal is to post at least 3 recipes a week.  This week I'm going to be posting the following recipes:

Skinny Country 'Fried' Steak
One Pot Curried Meatballs
Healthy Chicken Pot Pie

I'm also going to finally put up that meal plan that I was focusing on.
