These were inspired by this great little locally owned pizza shop that we frequently visit. They have a fantastic pizza that has garlic, spinach, mushrooms, feta and sausage. It's absolutely my favorite pizza. These baked egg muffins have the same delicious flavors without the calories and fat. They are perfect low-carb breakfast and make a fantastic snack or lunch.

Ingredients:
· 8 ounces (225 g) ground turkey sausage
· 1 large onion
· 8 ounces mushrooms (225 g), sliced
· 1 teaspoon garlic
· 3 eggs
· 3 egg whites
· 4 ounces (112 g) fat-free feta, crumbled
· 6 ounces (175 g) frozen chopped spinach
· 1 teaspoon fresh oregano
Directions:
1. Preheat the oven to 375 Fahrenheit (200 celsius). Cook the ground turkey sausage until it is cooked through. Set the sausage aside. Spray a large frying pan with non-stick spray. Add the onions. Cook them on medium-high heat for 5 minutes until the onions are beginning to get soft. Add the mushrooms and garlic and cook for a further 3 minutes.
2. In a large mixing bowl, add the turkey sausage, onion, mushrooms, garlic, eggs, egg whites, feta, spinach, and oregano. Mix well. Pour into a muffin tin that has been prepared with non-stick spray. Pour mixture into 12 muffins.
3. Bake in the oven for 20-22 minutes or until the egg muffins are cooked through and a skewer comes out clean.
