Easy Greek Baked Egg Muffins

Perfect low carb breakfast that is freezer friendly and perfect for meal prepping.

Breakfast is sometimes really hard for me to fit into my day.  I'm up really early for work and often spend so much time getting my kids ready that I often don't have time to eat breakfast.  That's why I like to have really quick things on hand that I can eat quickly or even take with me for breakfast.  Baked egg muffins are super quick and can be made in batches ahead of time.  They are easy to reheat in the microwave for 30 seconds.
Delicious baked eggs are easy for a quick meal.
These were inspired by this great little locally owned pizza shop that we frequently visit. They have a fantastic pizza that has garlic, spinach, mushrooms, feta and sausage. It's absolutely my favorite pizza.  These baked egg muffins have the same delicious flavors without the calories and fat.  They are perfect low-carb breakfast and make a fantastic snack or lunch.
