One Pot Healthy Pineapple Ginger Lime Chicken

Healthy dinners don't always have to take a lot of time.  It can be quick, fresh, and fantastic.

I absolutely love Chinese food.  It's one of my favorite things to get as a take out but can be SO many points.  The oil and sauces can take up an entire day's worth of calories or Smart Points for those of us on Weight Watchers.  I try to remind myself that my health is more important than having a bite of unhealthy (although delicious) food.  Despite this, sometimes, no matter how hard you try, you just want to have something that you're craving.  That's when I decided to make this fantastic and healthy version of a Pineapple Ginger Lime Chicken.
This healthy whole-grain recipe is super healthy and delicious for the whole family.
This recipe can be made in less time than it takes to order and pick up a takeout.  It will also cost a lot less money and, if you're like me, you don't have to get out of your pajamas to get it! This recipe is a perfect balance of tender chicken, crisp stir-fried vegetables, and sticky pineapple sauce.  It is really great served with brown rice for a complete meal.  

One Pot Healthy Pineapple Ginger Lime Chicken

· 2 lbs (900 g) boneless/skinless chicken breasts, cubed and pounded thin
· 1/4 cup (30 g) cornstarch
· 1/4 cup (35 g) wheat flour
· 1 tsp (5 g) ground ginger
· 1 clove garlic, minced
· 1 large onion, sliced
· 2 bell peppers, sliced
· 1/3 cup (80 ml) soy sauce, low-sodium
· 1 tablespoon (12 g) brown sugar
· 1 tablespoon (15 ml) sriracha
· 2 tablespoons (5 g) fresh ginger
· 2 limes, juice only
· 1 pineapple, cubed 

1. Season the chicken breasts with salt and pepper.  In a freezer bag add the cornstarch, wheat flour, and ground ginger.  Shake well to mix.  Add the chicken breasts and shake until the pieces are well coated.
The chicken is super tender and delicately spiced for a quick meal and easy recipe.
2. Coat a frying pan with non-stick cooking spray.  Heat the pan over medium-high heat. Add the chicken and stir constantly for 7-8 minutes. Add the garlic, onion, and bell peppers.  Cook for an additional 6 minutes.  If the chicken or vegetables begin to stick to the pan, add 1/4 cup of water to the pan.
Easy meal that is ready in less than 20 minutes for an entire family for a quick last minute meal.
4. Add the soy sauce, brown sugar, sriracha, fresh ginger, lime juice, and pineapple. Stir well and simmer until the sauce is thickened. 
Chunks of pineapple and lots of fresh vegetables add bulk to this dinner.
