I wanted to make one of the boys' favorite dinners as a reward for the hard work that was put into the fundraising. I knew that we would get back late and decided to make slow cooker version of smothered pork chops. The slow cooker is a perfect way to keep pork chops from drying out. These pork chops are perfectly tender and have a rich herbed onion and mushroom gravy. They are absolutely perfect with some mashed potatoes and steamed vegetables.

Ingredients:·
· 6 - 4-ounce boneless center cut pork loin chops, fat removed
· 1 medium onion, diced
· 8 ounce (225 g) mushrooms, sliced
· 1 1/2 cups (750 ml) chicken stock, low-sodium
· 1 tablespoon Worchestershire sauce
· 1 tablespoon garlic, minced
· 1 teaspoon oregano
Directions:
1. Place the pork chops into the bottom of the slow cooker. Add into the slow cooker the onion, mushrooms, chicken stock, Worcestershire sauce, oregano, and thyme and stir. Cook the pork chops for 6 hours on 'low' or 4 hours on 'high'.
2. Mix the cornstarch with two tablespoons of cold water. After the pork chops have cooked, remove the pork chops. Mix the cornstarch and water into the gravy in the slow cooker. Stir well and replace the pork chops. Turn the slow cooker on 'high' and cook for 30 minutes to thicken the gravy. Taste the gravy and season with salt and pepper to taste.
