Skinny Cannoli Stuffed French Toast

We are really lucky that where we live in Maine is not very far from Boston.  My mom used to take me and my brother to Boston all the time as children.  We would go on an adventure in the "big city".  In reality, any city seems big by Maine standards.  Our adventures would often end with my mom taking us to a quaint little shop in the North End to get the most fantastic cannolis. I loved to get them with all different kinds of fillings.  No matter how many I tried, my favorite was always chocolate chip.
My childhood love of cannolis made me want to make this absolutely fantastic stuffed French toast.  This recipe is super easy but makes a perfect treat.  It's really great for a breakfast, brunch, or dessert. Each stuffed French toast cut in half is 5 Smart Point or 10 for both pieces of French Toast and 1/4 cup of filling.  This breakfast is really filling and I found that my boys and I could only eat the 1/2 size portion.

Skinny Cannoli Stuffed French Toast
Servings: 8 ★ Size: 1/2 Stuffed French Toast ★

· 6 egg whites
· 1 1/2 cups (375 ml) skim milk
· 1 teaspoon ground cinnamon
· 8 slices french bread 
· 1 cup (250 ml) ricotta, fat-free
· 1 ounce (30 g) mini chocolate chips
· 1/4 cup (30 g) powdered sugar
· 1 vanilla bean or 1 teaspoons vanilla extract

1. In a large bowl mix the egg whites, skim milk, and cinnamon.  Dunk each piece of bread into the egg and milk mixture.  Place it on a griddle pan or large frying pan over a medium heat.  Cook for 3 to 4 minutes until the bread is golden brown.  Flip and grill the other side for an additional 2 to 3 minutes until golden brown.
2. In a separate mixing bowl, place the ricotta, mini chocolate chips, powdered sugar, and vanilla and mix.  
3. Spread 1/4 cup of the ricotta mixture on 4 of the 8 French toast pieces.  Create a sandwich with the additional piece of French toast and cook for an additional minute.  Cut each French toast sandwich in half and serve with fresh fruit.
