My childhood love of cannolis made me want to make this absolutely fantastic stuffed French toast. This recipe is super easy but makes a perfect treat. It's really great for a breakfast, brunch, or dessert. Each stuffed French toast cut in half is 5 Smart Point or 10 for both pieces of French Toast and 1/4 cup of filling. This breakfast is really filling and I found that my boys and I could only eat the 1/2 size portion.

Ingredients:·
· 6 egg whites
· 1 1/2 cups (375 ml) skim milk
· 1 teaspoon ground cinnamon
· 8 slices french bread
· 1 cup (250 ml) ricotta, fat-free
· 1 ounce (30 g) mini chocolate chips
· 1/4 cup (30 g) powdered sugar
· 1 vanilla bean or 1 teaspoons vanilla extract
Directions:
1. In a large bowl mix the egg whites, skim milk, and cinnamon. Dunk each piece of bread into the egg and milk mixture. Place it on a griddle pan or large frying pan over a medium heat. Cook for 3 to 4 minutes until the bread is golden brown. Flip and grill the other side for an additional 2 to 3 minutes until golden brown.
2. In a separate mixing bowl, place the ricotta, mini chocolate chips, powdered sugar, and vanilla and mix.
3. Spread 1/4 cup of the ricotta mixture on 4 of the 8 French toast pieces. Create a sandwich with the additional piece of French toast and cook for an additional minute. Cut each French toast sandwich in half and serve with fresh fruit.
