Skinny Salted Caramel Apple Brownies

When I was a small child I would often help my gram make an assortment of delicious sweet and sticky jams.  We would make all kinds of jam and I'm sure that as jam season starts, I will be sharing some of my family recipes with you. It's something that I always loved to do and this year I had over 70 jars of jam made.  I happened to have quite a lot of leftover homemade sugar-free apple butter which inspired this decadent desert.  Don't worry if you don't have apple butter, they are equally delicious with applesauce. These apple brownies make a perfect non-traditional brownie smothered in a sweet and salty caramel sauce. 

This recipe can easily be made dairy free by adding a non-dairy creamer such as almond or coconut creamer to the caramel.  It won't change the points and it makes this a perfect recipe to share with anyone with an allergy. The bars can be wrapped individually and frozen to take out an individual sized dessert anytime that you need it.  This comes in super handy if, like me, you have a horrible sweet tooth!

· 1 1/4 cup (320 ml) apple butter or applesauce, unsweetened
· 1/2 cup (100 g) brown sugar
· 3 eggs, whites only
· 1 teaspoon vanilla extract 
· 1 1/2 (180 g) cups whole wheat flour 
· 1 teaspoon baking powder
· 1 teaspoon cinnamon
· 1/2 teaspoon ginger
· 1/4 teaspoon nutmeg
· 3 medium apples, small dice
· 1/4 cup (50 g) white sugar
· 3 tablespoons fat-free creamer, coconut creamer, or almond creamer
· 1/2 tablespoon sea salt

1. Preheat the oven to 350F or 175C. Prepare a 9 x 13-inch pan by lining with parchment paper and coating with non-stick spray. Mix the apple butter or apple sauce, brown sugar, egg whites, and vanilla in a stand mixer or in a large bowl.  
2. Take out two tablespoons of flour and add it to the diced apples.  Stir and coat the apples in the flour. This will help keep them from sinking in the mixture.
3. Add the whole wheat flour, baking powder, cinnamon, ground ginger, and nutmeg. Mix on low until just combined. Gently fold in the apple pieces until the mixture is all combined. Place in the oven and bake for 25-30 minutes.  A toothpick should come out clean when inserted into the middle.
4. While the brownies are cooking, place the white sugar into a small saucepan.  Cook the sugar on a medium-low setting and stir constantly until the sugar has melted. This process takes around 5 minutes.  Continue to constantly stir until all the sugar has melted and the sugar has turned a medium brown color.  Take the caramel off of the stove and add the cream and salt.  Continue to stir until the mixture stops bubbling and a soft caramel has formed.
5.  Allow the brownies to rest and cool for at least an hour before drizzling the salted caramel over the top.  Cut into 12 squares and serve! The brownies can be kept in an airtight container for up to 5 days.

Perfect weeknight dinner that is ready in 30 minutes.
