Light One-Pot Chicken Parmesan Meatballs

This is the perfect quick, 30-minute, meal for the entire family.  My littlest one is our pickiest eater and I often have to fight him to get him to eat anything remotely healthy.  This meal was a huge hit with him!  He might have been covered with sauce and cheese by the end, but it was completely worth it to know that he had eaten a well-balanced and nutritious dinner.

One of the best ways I have found to get the boys to eat more vegetables is to have them help me make zoodles (zucchini noodles).  My kids love to make their own noodles and will eat almost any vegetable that we turn into curls of deliciousness.  The zoodles are not only kid-friendly but also 0 SmartPoints on WeightWatchers and low-carb.  They help keep the entire meal super light.  I was even able to splurge and add some extra parmesan to my portion!

Please leave a comment and let me know what you would like to see in the future!  I would love to make this more helpful to all of you.  You can also follow me on FacebookTwitter, or Instagram to keep up with my latest cooking adventures!
