Light One-Pot Chicken Parmesan Meatballs


This is the perfect quick, 30-minute, meal for the entire family.  My littlest one is our pickiest eater and I often have to fight him to get him to eat anything remotely healthy.  This meal was a huge hit with him!  He might have been covered with sauce and cheese by the end, but it was completely worth it to know that he had eaten a well-balanced and nutritious dinner.

One of the best ways I have found to get the boys to eat more vegetables is to have them help me make zoodles (zucchini noodles).  My kids love to make their own noodles and will eat almost any vegetable that we turn into curls of deliciousness.  The zoodles are not only kid-friendly but also 0 SmartPoints on WeightWatchers and low-carb.  They help keep the entire meal super light.  I was even able to splurge and add some extra parmesan to my portion!

Light One-Pot Chicken Parmesan Meatballs 
Servings: 6 ★ Size: 5 meatballs ★ Smart Points: 5 ★ Points Plus: 5 ★ Calories: 212 ★ Total Fat: 10 g ★ Saturated Fat: 4 g ★ Protein: 22 g ★ Carbohydrates: 8 g ★ Fiber: 1 g ★ Sugars: 2 g ★ Sodium: 503 mg ★ Cholesterol: 113 mg

Ingredients:
· 1 pound (450 g) ground chicken 
· 1/2 cup bread crumbs
· 1 egg, lightly beaten
· 2 teaspoons Italian seasoning
· 1 teaspoon oregano
· 1 teaspoon dried basil
· 1 clove garlic, minced
· 28 ounce canned crushed tomatoes
· 1 tablespoon fresh basil, finely chopped
· 1/2 tablespoon Italian seasoning
· 4 ounces fresh part-skim mozzarella, thinly sliced

Directions:
1. Preheat the oven to 375 F or 200 C.  In a large mixing bowl, mix together the ground chicken, bread crumbs, egg, Italian seasoning, oregano and dried basil. Form into 30, 1-inch meatballs.

2.  Cook the meatballs in a dutch oven or large covered pan on medium-high heat for 8-10 minutes or until the meatballs are cooked through.  Pour the crushed tomatoes over the top of the meatballs and stir in the basil and Italian seasoning.  Cook for an additional 5 minutes.

3. Top the meatballs with the sliced mozzarella. Place in the oven and bake for 10-15 minutes until the cheese is melted and bubbly.
Healthy dinner ready in 30 minutes and goes great with a weight watchers meal plan.
