Light One-Pot Mini Meatballs in Tomato Cream Sauce


I know that it's been a really, REALLY, long time since I last posted.  Life got a little too chaotic at work and home and I lost focus. Taking care of myself and creating my blog took a backseat to all of the stress and work that needed to be completed.  I'm truly sorry for this.  I have taken a few days after the end of my school year to refocus and reprioritize.  I am determined to get back on track and share some pretty fantastic recipes with you.

Light One-Pot Mini Meatballs in Tomato Cream Sauce
Servings: 6 ★ Smart Points: 8 ★ Points Plus: 9 ★ Calories: 344 ★ Total Fat: 6 g ★ Saturated Fat: 2 g ★ Protein: 26 g ★ Carbohydrates: 49 g ★ Fiber: 7 g ★ Sugars: 7 g ★ Sodium: 425 mg ★ Cholesterol: 65 mg


Ingredients:
· 28 ounces diced tomatoes, no salt added
· 1 1/2 cups chicken stock, low-sodium
· 1 large onion, diced
· 2 cloves garlic, minced
· 1/2 tablespoon Italian seasoning
· 1 pound (450 g) ground turkey, 93% lean
· 1/2 cup bread crumbs (I used Progresso Parmesan)
· 1 teaspoon Italian seasoning
· 1 teaspoon oregano
· 1 teaspoon dried basil
· 10 ounces rotini (I used Smart Taste Rotini)
· 1/2 cup half and half, fat-free
· 4 ounces cream cheese, fat-free
· 1 tablespoon fresh basil, finely chopped

Directions:
1. In the RockCrock Dutch Oven or large covered pan, pour in the tomatoes, chicken stock, onion, garlic, and Italian seasoning.  Bring to a simmer.

2. In a large mixing bowl, mix together the ground chicken, bread crumbs, Italian seasoning, oregano and dried basil. Form into tiny meatballs and add to the sauce.  Cook for 5 minutes.

3. Add the pasta and cook covered until done stirring occasionally.   It will take 10-12 minutes. Slowly add the half and half and cream cheese.  Stir until melted.  Fold in the fresh basil.   
Healthy dinner ready in 30 minutes and goes great with a weight watchers meal plan.
